Here is an easy recipe to switch up the always fun taco night.
Ground Sirloin with Spinach and Black Bean Roll Ups
- 1 pound ground sirloin
- 1 tsp. cumin
- 2 cups baby spinach
- Black beans
- Olive oil
Caramelize onions with olive oil.
Add ground sirloin, salt and pepper, 1 tsp. of cumin.
Chop 2 cups of baby spinach, add black beans and mash with a fork.
Brush olive oil on both sides of tortilla and then add sirloin mixture and roll.
Place on baking sheet and bake at 400 degrees for 30 minutes.
