Watermelon is one of my family’s favorite fruits! To add a Cinco de Mayo twist to tonight’s taco night, we whipped up watermelon salsa! It took less than five minutes to whip up this sweet and savory salsa!
My daughter raced over to try the salsa! She loved the vibrant pink color! My son was intrigued and could not wait to dip his tortilla chips into this new concoction. My husband called from work and could hear the children’s munching in the background. He said that he was leaving work NOW and to save him some salsa!
My son loaded his taco with cheese. I piled my taco high with veggies and black beans. My husband stuffed his taco with ground turkey and watermelon salsa.

Easy Watermelon Salsa:
Ingredients:
- ½ cup watermelon, chopped
- ½ cup red onion, diced
- 1 avocado, peeled and chopped
- 1 lime, fresh squeezed juice
- 1 Tbsp. fresh basil, shredded
- Salt and pepper to taste
Directions:
- Combine all ingredients into a bowl.
- Stir.
- Serve with tortilla chips.
