Healthy muffins to whip up with the kids this weekend

Fall is officially here and now it is time to start baking with pumpkins. Hooray!

This recipe is one of my family’s fall favorites. Everyone in your family will have fun making and eating these healthy and easy pumpkin muffins.

There is no butter, no oil, and low sugar. What more could a parent ask for? Instead of butter and oil, I substituted in good-for-you ingredients — applesauce, Greek yogurt and whole wheat flour.

I bet your family falls in love with these muffins too!

Skinny Pumpkin Chocolate Chip Muffins

Yields 10-12 muffins

Ingredients

  • ¾ can of 15-ounce pure pumpkin
  • 2 eggs
  • ½ cup applesauce
  • ½ cup white sugar
  • 1 ½ cup whole wheat flour
  • ½ cup nonfat vanilla Greek yogurt
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • Pinch of salt
  • ¾ cup chocolate chips

Directions

Preheat oven to 350 degrees.

Combine all the ingredients into one bowl.

Stir until smooth.

Bake 40-45 minutes or until you stick a fork through the middle of a muffin and it comes out clean.
