Dinner tonight: A healthy pizza made easy

Due to the early dark sky, I have been cooking less and using easier recipes than ever! These Roasted Zucchini Bites are one of my family’s favorites and you will not believe how easy and delicious they are.

Kid Tip: Let your child spread on the sauce and layer on the cheese. The more they get involved in the preparation process, the more likely they are to try this delicious and healthy vegetable! I was thrilled when my daughter asked for seconds.

Easy Roasted Zucchini Pizza Bites

Serves 4

Ingredients

Olive oil cooking spray

2 zucchini- slice each zucchini vertically into thirds — each slice should be about ¼ inch thick. Then cut each vertical slice in half. Each zucchini should yield six mini zucchini pizzas.

1/3 cup your favorite marinara sauce

¼ cup shredded mozzarella cheese or fresh thin slices of mozzarella

Directions

Preheat oven to 425 degrees.

On a baking sheet, line with aluminum foil and spray with cooking spray.

Lay zucchini side by side.

Using a spoon, spread on marinara sauce to cover the top of the zucchini completely.

Layer each zucchini with either shredded or fresh sliced mozzarella cheese (The big ball of mozzarella really does taste better).

Bake 15-20 minutes or until cheese is completely melted.
