Pinterest pumpkin recipe is easy way to kids’ tummies

A few years ago, I stumbled across a series of pins that promised two-ingredient muffins. I went out that day and bought ingredients. I make them every few weeks now and they are a hit with my family! And they really do just require two ingredients.

Did I also mention that they are low in Weight Watchers’ points because you aren’t using things like oil, butter, or eggs?

Two-Ingredient Pumpkin Muffins (Tested & True)

Ingredients

  • 1 can of pure pureed pumpkin (NOT pumpkin pie mix)
  • 1 box of Spice Cake mix (You can use other kinds of mixes, but this gives the most “fall” flavor)

Directions

Preheat oven to 350 degrees. Combine pumpkin and cake mix. DO NOT ADD ANYTHING ELSE THE BOX SAYS. Place in muffin liners in a muffin tin. Bake for 13-15 minutes or until done (depending on your oven). Remove, cool until just warm and gobble them up!

For extra delight, we like to add mini-chocolate chips (goodbye, Weight Watchers) and sometimes, cinnamon chips from Hershey’s if we can find those. The boys love them and I like serving these for a quick breakfast, sharing in the classroom, bringing to a bake sale or even serving friends. Total cost for around 18 muffins? (I had muffin liners on hand). These freeze well, so if you decide to bake in advance, feel free to pop them in the freezer and take out when ready to eat.
