A perfect recipe for a lazy night dinner

The past couple of weeks I have been lazy about cooking. Last night I cooked and wanted to share the quick and healthy recipe with you! The kids were not thrilled with this recipe because it involved so much green, but if you can get your kids beyond the healthy color, the taste is amazing.

Since I am on a lazy streak, I bought a roasted chicken and enlisted my daughter to pull out the white meat. I bought the pesto pre-made from Whole Foods. If you have time to grill chicken breasts, go for it. This dish also would taste delicious with tofu or with simply the quinoa, spinach and pesto.

My daughter loved tearing apart the chicken. My son joined in the end by shredding the Parmesan cheese. The end result was a mostly homemade delicious healthy meal!

Pesto Quinoa with Spinach and Chicken

Ingredients

  • 1 roasted chicken
  • 1 cup dry quinoa
  • 1 cup pesto
  • 1 tsp. olive oil
  • 3 cups fresh baby spinach
  • Salt and pepper to taste
  • Fresh shredded Parmesan cheese

Directions

Tear white meat from chicken into bite-size pieces and set aside. Cook quinoa according to package directions.

In a large skillet, on medium high, add 1 tsp. olive oil. After 25 seconds, add the cooked quinoa and pour the pesto on top. Stir pesto into the quinoa for about one minute.

Blend in the fresh spinach and stir for 30 seconds.

Blend in the chicken and add salt and pepper to taste.

Garnish with fresh shredded Parmesan before serving.
