Chicago mom whips up crowd-pleasing pasta dish

We went to the park TWICE in one day over the warm weekend! Chicago weather is finally turning into spring!

Both my kids needed an energy-packed dinner for playing outside. They both requested pasta for dinner and this is the recipe we came up with, Creamy Pasta, using Greek yogurt instead of cream.

So easy, healthy, and delish!

Easy Creamy Pasta

Ingredients

  • Your noodle of choice
  • ½ cup favorite marinara sauce (My family LOVES Rao’s.)
  • 3 Tbsp. 2% plain Greek yogurt
  • ¼ cup Parmesan cheese
  • A pinch of crushed red pepper (More if you prefer a spicy kick.)
  • Optional: Feel free to blend in 1 cup baby spinach leaves or cooked broccoli florets for a veggie boost.

Directions

Cook noodles according to package directions.

Once pasta is cooked, rinse noodles and pour noodles back into same pot.

On low heat, in the noodles pot, add marinara sauce, Greek yogurt, Parmesan cheese, and crushed red pepper. Stir 3-5 minutes.

Garnish with Parmesan cheese.
