I recently stumbled across this pin for two-ingredient banana pancakes and thought this was simply too good to be true. I always have bananas that never last very long on the shelf and would be perfect to toss into a quick (and easy) recipe like this. The true test is what my kids would think of something without carbohydrates and added ingredients.

1 banana, sliced
That’s all. You probably already have at least half the ingredients in your house already. The steps are simple – slice up the banana, crack the two eggs into a bowl and add the sliced banana. Smash, smush, mix up, whip, however you call it, but blend those ingredients all together and voila! Instant pancake better (with natural fresh ingredients!) I blended mine in a small blender just to make sure it was all whipped together well.
Cook as you would cook normal pancakes on a skillet with a small amount of oil or butter. Lightly brown on each side. These can brown quickly so be sure to watch them. Serve with syrup, butter, peanut butter, or cinnamon. The possibilities are endless. Another suggestion I tried was separating the yokes and whites. Mix bananas with yokes, then whip whites and add those to the mixture. The result is even fluffier pancakes.
These pancakes were a hit with my boys. I served them with peanut butter and cinnamon. One of my favorite aspects of these pancakes is that they require virtually no ingredients so I know exactly what is going into them. They are the perfect addition to any nutritional plan, such as the Paleo diet.
