Healthy fish recipe brings tropics to Chicago families’ kitchens

Despite this rainy week in Chicago, we didn’t let the cold bother us. (Thanks Elsa) We took a trip to the local fish store, which is always a fun kid afternoon activity. We selected the mahi mahi but halibut or salmon will work with this marinade and mango salsa.

This delicious and healthy fish dish brings a little bit of the tropics to your kitchen.

Broiled Mahi Mahi with Mango Salsa

Ingredients

  • 4 (4 ounce) mahi mahi filets
  • 2 Tbsp. olive oil
  • 1 ½ tsp. soy sauce
  • 2 tsp. lemon juice
  • 1 garlic clove, crushed
  • 2 tsp. red pepper flakes
  • 1 tsp. black pepper
  • ½ tsp fresh ginger, minced
  • Salt to taste
  • 1 ½ tsp. butter
  • 1 ½ tsp. white sugar
  • 1 ½ mango, cubed

Directions

In a bowl, whisk olive oil, soy sauce, lemon juice, garlic, red pepper flakes, black pepper, ginger, and salt.

In a bowl, big enough for the four filets, pour marinade to coat fish. Cover bowl with plastic wrap and marinate in refrigerator for at least one hour.

After an hour, preheat broiler.

Remove fish from bowl and place in a large sprayed baking pan in a single layer.

Broil until fish flakes easily with a fork, about 10 minutes.

While fish is in the oven, melt butter and sugar in a skillet over medium high heat. When mixture begins to bubble, stir in mango cubes. Cook until mango is tender, about five minutes. Top filets with mango salsa just before serving.
