An Introduction and My Famous Meatloaf

Hi everyone! I’m very excited to be taking on this new gig, writing about family meals. I am looking forward to sharing some great recipes, and also letting you all in on the secret treasures here in Chicago for family meals outside the home.

Since this is my very first post, I thought it would make sense to start with old faithful: my famous meatloaf.This meatloaf is so good that the recipe is actually printed on the back of every one of my blog business cards. I’ve had lots of friends and family try this meatloaf for themselves, and they all rave. Even the kids. Even the PICKY kids.

The secret to this meatloaf is the horseradish. Now, I know. Your kids are picky. They hate anything spicy. Right. I know. Trust me. This recipe is a great way to sneak in a complex flavor without kids realizing what’s up. They’ll just taste deliciousness. They won’t taste horseradish. And, lo and behold, their tastes will slowly but surely evolve into something a bit more complex. Win/win.

Foodmomiac’s Meatloaf

  • 1 pound ground beef
  • 1 pound ground pork
  • 2 eggs
  • 2 Tb. ketchup
  • 1 Tb. yellow mustard
  • 1/2 cup rolled oats
  • 1 Tb. dehydrated minced onion
  • 1 tsp. garlic powder
  • 1 Tb. prepared horseradish

Combine everything together in a large bowl using your hands (This is the most important part. I honestly believe that it is impossible to make good meatloaf using a spoon.)

Place in a 9 inch loaf pan. Bake at 350 degrees for 90 minutes.
