This past week my daughter and son were ready to cook dinner almost every night! Since I had nothing in the refrigerator, we headed to the local market. I grabbed what looked fresh and settled on Beef Fried Rice, except instead of rice, I used quinoa for a healthy twist. It turned out delish!
If you think your kiddos won’t give quinoa a try (it is high in protein for a grain but has a nuttier flavor than rice), then stick with brown rice. No matter what grain you use, this recipe is a healthy and fun dinner for your family to enjoy.
Quinoa Beef Fried Rice
This recipe also tastes great vegetarian, with chicken, tofu, or shrimp.
- Olive oil spray
- ¼ cup green onion, diced
- 1 pound ground sirloin
- 1 tsp. steak or hamburger seasoning
- Salt and pepper to taste
- 1 cup dry quinoa, cook according to package directions (OR brown rice if you don’t think your kids will like the quinoa)
- 1 cup broccoli, chopped
- ½ cup carrots, shredded or chopped
- 2 cups baby spinach
- 2 eggs
- 1 tsp. honey
- 1 Tbsp. sesame oil
- 1 Tbsp. soy sauce plus 2 tsp. soy sauce
- Hot sauce, optional (probably more for the parents)
You will need two pans and one pot with a lid for the quinoa/rice.
Cook the quinoa first and set aside when it is cooked.
In a pan, spray olive oil spray on medium high heat and add beef. Season with salt and pepper to taste and hamburger seasoning. Also drizzle on 1 Tbsp. soy sauce.
While the beef is cooking, chop it into tiny pieces with a hard spatula. Cook for about eight minutes or until meat is completely cooked through. Sprinkle in the diced green onion.
In the other large pan, spray olive oil spray, add carrots and broccoli. Pour on sesame oil. Sauté about six minutes.
Add spinach and cook another two minutes.
Once meat is cooked, add it to the large veggie pan. Also add the cooked quinoa to the large veggie pan. Drizzle on honey and 2 tsp. soy sauce. Mix.
Create a small opening in the pan and crack two eggs and scramble. Blend eggs with entire mixture for about five minutes or until eggs are cooked.
