Date night at Fulton’s

Even after one of the loveliest winters I’ve ever spent in Chicago, I am overjoyed to see spring show up early this year. This month’s destination is perfect for the next two beautiful seasons of dating.

Jon and I visited Fulton’s on the River, a charming spot on North LaSalle Street smack dab on the Chicago River. We were treated to a sneak peek at the specialty cocktails and gourmet concoctions they’re cooking up for the warmer nights headed our way.

We started off with a Pimm’s Cup, described by the beverage manager and our host for the night as “the cocktail the Brits drink at all their fancy sporting events.” It is a light and refreshing citrus and bitters combo infused with mint and cucumber. It tasted all innocent, but I am sure it could get you in a bit of trouble mid-polo match.

We also met Chef Kevin Schulz, who came to the table with our appetizer: super-thin beef carpaccio wrapped around truffled whipped egg yolks. A “Ka-POW!” kind of creation he created just for fun, just for us. Yeah, that’s how we roll.

What followed were a few more cocktails, including a festive and yummy Moscow Mule made with ginger beer and a Caipirinha made with Brazilian rum. Both super delish.

We also sampled a braised sea bass over sautéed kale in cabernet sauce and my favorite, an Alaskan halibut with Brussel sprout chips. Everything we ate was infused with Chef Kevin’s playful and creative vision.

We wrapped it up with warm bread pudding croquettes that came with three ridiculously tasty dipping sauces and a lovely glass of lightly sweet Muscato wine. I could have bathed in that dessert.
