Pinterest: It’s what’s for dinner

As a mom of two little boys and feeling like our life is constantly on the go (especially being summertime!), I find myself slipping into a food-making slump. Scraping the backs of the cupboards for the last remnants of pasta or re-vamping typical breakfast fare, I seem to have a (very small) rotation of the same tired recipes. I’m also especially leery of those things that will steam up our house by turning on the oven or require more than one hour of prep time.

For the upcoming week, I’ve decided to take four out of the seven days and tackle recipes from Pinterest. You know the ones -you’ve pinned them to your “Dinner” board (sometimes even twice!) and your mouth waters at the pictures, but you never commit.

I’m issuing a challenge to you this week: Find three or four recipes you’d LOVE to try and make it happen. I’ll be aiming to try them during dinnertime, but feel free to choose some for whatever meal you need a little oomph in. I’m aiming to find entire meals, but adding a new side or delicious bread is perfectly acceptable as well.

Here’s the breakdown of the meals I’m considering:

Garlic and Lemon Chicken – Fiveingredients (plus spices and olive oil)? Count me in.

Caprese Pasta -My favorite salad combined with a carb sounds like theperfect vegetarian meal for my crew.

Healthy Chicken Enchiladas -We heart Mexican food. Like a lot.

Grilled Cheese Bar -This is just one type of sandwich. But perhaps we could each build our own?

Slow Cooker Honey Sesame Chicken -I feel like I want to make this. I also feel like mine won’t look this delicious….
