After receiving a bounty of zucchini from a friend, I set off to find ways to use it. Another friend posted a recipe for Bacon and Cheddar Zucchini bread and my mouth immediately started to water. I discovered I had all the ingredients I needed (Southwest cheese instead of cheddar) and set to work creating this delicious savory bread for myself.
Garden Harvest Bacon & Cheddar Zucchini Bread
- 1 cup grated zucchini
- 3 eggs
- 1 Tbsp. sugar
- ½ cup oil (you could also substitute applesauce to lower calories, but that may make bread taste more sweet instead of savory)
- 1 cup cooked and drained bacon
- 1 cup shredded cheddar cheese (Southwest cheese is what I had on hand)
- 6 Tbsp. milk
- 1.5 cups all-purpose flour
- ½ tsp. baking powder
- ½ tsp. baking soda
- Pinch of salt
- 1 tsp. black pepper
Preheat oven to 300 degrees. Grease loaf pan. Mix zucchini, eggs, sugar and oil together until well blended. Slowly stir in bacon and cheese. Combine dry ingredients and then mix with the wet until well blended. Bake for 40 minutes or until done based on your oven. Enjoy!
