Healthy muffins for the ones you love

We are in muffin mode at my house. My daughter spied the overly ripe bananas and wanted to try baking a new morning muffin for the week. We used red baking cups for a Valentine’s Day theme.

To add more protein we added an extra egg white and yogurt. We also used 1 cup of oats and 1 cup of whole wheat flour for extra fiber. To keep these muffins low sugar, we only added a small amount of sugar and shredded coconut.

Banana Oat Coconut Yogurt Muffin

Ingredients

  • 2 ripe bananas, mashed (Let your child be in charge of this part!)
  • 1 egg white
  • 1 egg
  • ¼ cup applesauce
  • ¾ cup plain nonfat yogurt
  • 1 tsp. vanilla
  • ¼ cup white sugar
  • ¼ cup shredded coconut
  • 1 cup oats
  • 1 cup whole wheat flour
  • 1 cup chocolate chips (Optional- but in my house chocolate chips are a MUST!)

Directions

Preheat oven to 375 degrees.

Combine all ingredients until smooth and lastly blend in the chocolate chips.

Bake for 30 minutes or until cooked through.
