Whether you plan an elaborate breakfast or put together these sweet, “paper-lined” treats, your kids will flip for foods that represent the return to school. Last year, I surprised my niece and nephews with this Pencil Cookie Cake. Rather than baking a traditional cake and carving it to look like a pencil, I baked a cookie underneath (their favorite) and found the carving to be much easier. The frosting was store-bought and just dyed with food coloring making things much easier. These back-to-school lunchbox notes are sure to be a hit with your kids. Once my boys are in school full-time, I’d love to surprise them with this once or twice a week. Doing so daily might lose its effect (and mom might get tired!)
