What’s in season for May? Cooking with spring greens

Spring has sprung and the weather is finally warm enough to put away our winter parkas! You have spent time spring cleaning and now it’s time to look forward to summer. While we wait, now is a great time to add greens to your weekly grocery list. Arugula and spinach are in season this month and we’ve rounded up ideas to add some greens in your day from morning to night.

Green Monster Smoothie

Start your day with a dose of the good stuff! Packed with two cups of spinach, you would never guess how healthy this smoothie is based on the peanut-buttery taste. It’s even two-year-old approved!

Chicken Sausage and Spinach Frittata

This recipe can easily be prepped on Sunday to have breakfast on hand for the week. Paired with a piece of fruit, it’s a perfectly balanced start to your day!

Butternut Squash & Arugula Salad

A veggie-filled salad with sticking power thanks to cannellini beans will fill your lunch box with flavor. A bed of Arugula is topped with red onion, corn, basil and butternut squash to make for a delicious, nutritious meal!

Blueberry Broccoli Spinach Salad with Poppyseed Ranch

Here’s another salad filled with flavor thanks to the unique combination of blueberries and broccoli, spinach. Topped with dried cranberries and sunflower seeds for crunch, plus a delicious poppy seed ranch, your taste buds and health will thank you!

Prosciutto-Arugula Pizza

Celebrate spring with a salad topped pizza. Whip up this easy whole wheat pizza dough recipe for a fun family dinner. Have picky kids? The dough recipe makes enough for two so you can also make a second, kid-friendly pizza. (Or freeze the second dough for later!)
