Shrimp Plantain Cups make a perfect summer meal

MasterChef Jr. Season 5 contestant Logan Hagene wowed the crowd at Kids Eat Chicago with his super popular Shrimp Plantain Cups. They make a perfect summer meal.

Ingredients

For Logan’s simple pico de gallo: Red onion, tomato, cilantro, jalapeño, lime, and salt (mixed all together to taste)

For Logan’s simple guacamole: Avocado, onion, tomato, cilantro, lime, and salt (mixed together to taste)

Other ingredients:

3 plantains

1 dozen shrimp (peeled and deveined)

Lime

Cumin

Salt and pepper

Oil for frying

Directions

Season the shrimp with cumin, salt and pepper to your liking

Peel and slice the plantains in thirds and fry until golden

Place fried plantain pieces into muffin pan and use a small cup or ice cream scoop to press it into a bowl form

Fry the bowl forms again until golden brown and then salt them

Fill each cup with guacamole, then pico de gallo and top with shrimp!
