Ingredients – Chicken
2 pounds skinless, boneless chicken breasts (Pounded to an even thickness)
2 tbsp olive oil
1/2 tsp cumin
1/2 tsp cayenne (or sub for paprika if you want it mild)
Lime zest from one lime
1/4 cup lime juice
3 cloves garlic (minced)
3 tbsp finely chopped cilantro
1/2 tsp salt
Directions
Mix ingredients to make marinade.
Place and coat chicken in marinade and refrigerate 3-5 hours.
Grill on your preferred grilling method 5 mins each side until fully cooked.
Ingredients – Grilled Corn and Avocado Salad
4 corn (husked still on cob)
1 red onion
1 avocado
1/4 cup lime juice
1/4 cup crumbled cotija cheese
1/2 tsp salt
Finely chopped cilantro and paprika for garnish
Directions
Grill the corn on your preferred grilling method.
Once cooked, carefully cut kernels off the cob into a bowl.
Add chopped red onions, chopped avocado, lime juice, salt, and cheese and mix.
Garnish with cilantro and paprika.
