Summer slaw will be your summer staple

MasterChef Junior Season 5 contestant Syd Neuser whipped up a favorite recipe — Syd’s Summer Slaw — at Kids Eat Chicago to rave reviews. She suggests serving it as a light side or a topping for pulled pork or shredded chicken sandwich.

Ingredients

2 cups red cabbage

1 cup green cabbage

2 medium carrots

1 cup peeled green apple

Sweet bell peppers for color and crunch

Combine the following for a light dressing:

2 Tbsp. olive oil

2 Tbsp. apple cider vinegar

2 Tbsp. honey

Juice of one lime

1 Tbsp. Dijon or honey  mustard

Salt and pepper to taste

Directions

Grate or thinly slice the cabbage, peppers, apples and carrots into long thin strips

Pour dressing over vegetables, toss until well combined and chill!
