Passover macaroons

Just say no to the can this Passover and whip up these kosher desserts in less than 20 minutes.

Ingredients

  • 2 egg whites
  • 1 tablespoon potato starch, optional
  • 2 1/2 cups of shredded coconut
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon almond or vanilla extract

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix together all ingredients and scoop spoonfuls onto a cookie sheet covered in parchment paper.
  3. Bake for 12-15 minutes, or until tops and bottoms of each cookie are browned.
