Just say no to the can this Passover and whip up these kosher desserts in less than 20 minutes.
- 2 egg whites
- 1 tablespoon potato starch, optional
- 2 1/2 cups of shredded coconut
- 3/4 cup sugar
- 1 teaspoon cinnamon
- 1 teaspoon almond or vanilla extract
- Preheat oven to 350 degrees.
- Mix together all ingredients and scoop spoonfuls onto a cookie sheet covered in parchment paper.
- Bake for 12-15 minutes, or until tops and bottoms of each cookie are browned.
