Campfire Croques-Monsieur

You can cook just about anything in a cast iron skillet, including this classic French sandwich.

Ingredients

  • 8 slices bread
  • 8 slices ham
  • 4 slices Swiss cheese
  • 2 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 eggs
  • 3/4 cup milk
  • 1 tablespoon butter
  • Salt and pepper to taste

Directions

  1. Assemble sandwiches: Mix together mayonnaise and mustard and spread on one side of each slice of bread. Place two ham slices and one cheese slice in each sandwich.
  2. Melt butter in skillet. Beat eggs with milk in a shallow bowl; add salt and pepper. Dip each sandwich in the egg mixture before frying in pan. Flip when golden brown; fry on other side until done.
  3. Serve with a side of baby carrots and sugar snap peas.
