7 easy one-pot meals for every day of the week

We are three months into the year and it’s likely that your New Year’s resolutions have fallen to the wayside. But the good news is we have 41 more weeks to get it right. And if your resolutions included cooking more at home, eating healthier and saving money, I’ve got your back. 

This easy meal plan is filled with my family’s favorite recipes that will help make this week a breeze. Hopefully this will get the ball rolling for the remaining 40 weeks of year. You’ve got this!


Slow Cooker Sage Short Ribs Gorgonzola Cream Sauce

Slow cookers can be a lifesaver for busy weekdays, but they can also help your lazy Sunday stay that way. These short ribs could not be easier to set and forget, and they pair perfectly with steamed broccoli. The smell is irresistible and my husband gets giddy whenever he sees this on our weekly meal plan.


Walnut Crusted Sheet Pan Salmon

Take meatless Monday to another level with a salmon recipe that’s so delicious it could be served in a restaurant. My family loves the savory sweet combination of the walnuts, maple syrup and Dijon mustard in the salmon topping and I love that we only have one pan to wash. 


One Pan Beef Taco Bowls

I am always looking for new ways to sneak veggies into our meals and this beef taco bowl recipe does just that. It is on our weekly rotation often since it’s easy, healthy and customizable. Our favorite topping is guacamole — it does not need much else!


Chicken Sausage Sweet Potato Bake

This chicken sausage sweet potato bake is a true one pan meal that can be prepped in a few short minutes. We love to top this dish with hot sauce and sauerkraut for an extra kit, but it is good as is. My toddler eats this one up!


One Pan Ranch Pork Chops and Veggies 

It’s Friday Eve and we’re almost to the weekend! This is another great sheet pan recipe that can be made even easier by lining the pan with foil before popping it in the oven. Enjoy some family time catching up on the day while it bakes!


Thai Green Curry

When we are in the mood for takeout, this Thai green curry recipe always fulfills the craving. It’s a one pan dish that can be made in less time than it would take to run to a restaurant. When served over rice or riced cauliflower, it’s the perfect meal!


Slow Cooker Buffalo Chicken Chili

Bring your slow cooker back out for another satisfying meal. This buffalo chicken chili recipe is perfect for busy Saturdays filled with kids’ activities, birthday parties and more. Just pop it in before you head out for the day and come home to a delicious meal!
