How Tanta Chicago’s manager is blending fatherhood and food with a new Peruvian Thanksgiving meal

With a newborn at home and the holidays on deck, restaurateur Quentin Laurent is finding balance—and creating thoughtful ways to help Chicago parents do the same.

Quentin Laurent, general manager of Tanta Chicago, is quickly learning what it means to balance the demands of parenthood and a thriving career. With a newborn at home and holiday preparations ramping up at work, time has never felt more precious.

Tanta Chicago, a vibrant Peruvian-inspired eatery, offers dinner, brunch, happy hour and private-event service, featuring traditional Peruvian dishes, signature cocktails and spaces ranging from a private dining room to a seasonal rooftop terrace. With such a dynamic operation, Laurent knows the rhythm of service-industry hours all too well — and how challenging it can be to juggle long shifts with family life.

He shared with us how becoming a father has reshaped his work ethic — and what he’s doing this season to help lighten the holiday load for Chicago families.

Blending parenting with professionalism

After recently becoming a dad, many things have shifted in Laurent’s life. With a new perspective on the responsibilities that lie outside of work, his leadership style has shifted to place a greater emphasis on empathy and patience.

“When you’re balancing parenthood and leadership, you quickly learn to focus on what truly matters and empower others to take ownership. I think more about the kind of example I want to set for my child and my team in terms of integrity, balance and how we treat people,” said Laurent.

Leading with a renewed sense of patience, communication and empathy, he says his team feels much more connected to one another.

Outside of the kitchen, being a dad has enabled him to serve his guests on a higher caliber. Just like his own child, Laurent knows that every guest desires to be seen and cared for. He now strives to exceed this level of care and create genuine moments of connection with every guest.

Trying to balance the heavy demands of both work and home has taught Laurent to be fully present in whatever environment he’s in. On his days off, he appreciates simple and relaxed dinners with his family. As a former cook, he loves making new dishes for his daughter, who enjoys his homemade Mexican chicken soup.

Knowing the importance of quality time with family, Laurent wants to make the hectic holiday season easier for Chicago families. Taking the stress off of busy parents, Tanta is offering a “Pollo To Go” menu that blends familiar holiday comfort with bold Peruvian flavor. Featuring a 24-hour-marinated whole chicken in Peruvian spices, plenty of mouthwatering sides and a Pumpkin Tres Leches for dessert, Chicago families can relax and enjoy a Thanksgiving meal without the hassle of preparing a feast.

“This menu is really about giving families a chance to enjoy something special without the stress.
