S'mores are nice, but next time your family gathers around the campfire, try this treat instead. With a little prep before you hit the trail, it's even easier.

  • 1 can sweet potatoes, drained and mashed
  • 3 Tbsp. brown sugar
  • 2 Tbsp. softened butter
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • 1 cup mini-marshmallows
  • 1 tube refrigerated pie dough

To make the filling, mix the drained and mashed sweet potatoes with sugar, cinnamon, nutmeg and butter. (You can do this step ahead of time if you don't want to do it at your campsite.)

Unroll the dough sheet and cut it into four rectangles. On one side of each rectangle, place ¼ of the pie filling, top with ¼ of the marshmallows. Fold over the dough so that it covers the filling, and press the edges gently. Place each pie in an aluminum foil pouch big enough to cover the dough completely. Place the foil pouches on the coals at the edge of your cooking fire. After five minutes, flip the pouches. Pie is done when dough is golden, about three more minutes.
