Start your day off right with these healthy breakfast casseroles
Tuesday, August 24, 2010
Nothing beats a filling, hot breakfast on a school day. We all know it helps the kids focus on their lessons and keeps their tummies from rumbling until lunch. But most moms and dads we know have their hands full just getting the kids out the door on time after a quick bowl of cereal, piece of fruit or cereal bar. Most of us are lucky to remember if we ate ourselves.
Thanks to the editors of Taste of Home magazine, these yummy-and healthy-casseroles can be made ahead of time, refrigerated and re-heated in the microwave before the mad dash out the door in the morning. Save the plates and forks for washing after school; it's a good chore for the kids.
French Toast Casserole
Like
cheeseburger pizza, this recipe is a testament to the truth that
combining two delicious things almost always ends in a more
delicious thing. Also, the truth that a touch of maple syrup makes
everything better.
Breakfast Casserole
All your
favorite breakfast items, tossed in a 13x9-inch baking pan and
served up with a smile, and maybe a cup of coffee for mom and dad.
For a vegetarian option, try substituting your favorite soy sausage
for the meat or a slice of avocado on top.
Meatless Sausage Egg Bake
Don't
let the name fool you: Yes, this is a vegetarian dish, but even the
most carnivorous members of your brood will still love it.
Ham 'n' Cheese Squares
Your kids'
favorite lunch sandwich is now an early morning go-to. Make a batch
over the weekend and you'll have simple, microwaveable breakfasts
all week.
