After feeling frustrated with the high sugar and canola oil granolas at the grocery store, I started baking my own with extra virgin olive oil for a heart healthy boost, flaxseeds for omega-3s, and kamut, a high fiber superfood. This creation resulted in starting my own food company called Jolly Oak.
Not only does my family enjoy my Good For You Granola every morning with yogurt or milk, but I use it in one of my favorite chocolate chip cookie recipes. This recipe is healthier than the usual chocolate chip cookie, but I promise, it tastes just as decadent! Feel free to enjoy this Granola Chocolate Chip Cookie for breakfast, lunch, a snack, or dessert!
Both my son and daughter helped measure, stir, and create different size cookies. They argued over who got to pour what ingredient in but both agreed these cookies were the perfect treat!
Preheat oven to 375 degrees.
In a large bowl, mix butter, applesauce, white sugar, brown sugar, and vanilla.
Add eggs, oats, granola, flour, baking soda, and salt.
Mix until blended.
Add chocolate chips and optional nuts.
Bake for 12-15 minutes or until golden brown.
