We are in muffin mode at my house. My daughter spied the overly
ripe bananas and wanted to try baking a new morning muffin for the
week. We used red baking cups for a Valentine's Day theme.
To add more protein we added an extra egg white and yogurt. We
also used 1 cup of oats and 1 cup of whole wheat flour for extra
fiber. To keep these muffins low sugar, we only added a small
amount of sugar and shredded coconut.
Enjoy this easy recipe for an extra healthy morning muffin!
Preheat oven to 375 degrees.
Combine all ingredients until smooth and lastly blend in the
Bake for 30 minutes or until cooked through.
